Double Peanut Butter M&M Cookies

December 16th happens to be my 11th wedding anniversary!  I love my husband, his sense of humor, his dedication to our children and me, his work ethic, his triathlon accomplishments, even his sarcastic view of life. I'm very proud of our home and two children!  So in honor of him and his extreme love of peanut butter, here is his version of the perfect cookie.  Those folks who make the M&M's sure knew what they were doing when they decided to offer their peanut butter M&M's (the all-time favorite flavor for both my husband and I) in Christmas red and green.  Happy Anniversary Tom!

Double Peanut Butter M&M Cookies
1 3/4 c. flour
3/4 t. course sea salt
1 t. baking soda
1 stick of butter, softened
1/2 c. white sugar
1/2 c. packed brown sugar
1/2 c. creamy peanut butter
1 egg
1 t. vanilla
2 T. plain yogurt (or milk if you don't have yogurt on hand)
1 1/2 c. peanut butter M&M's
Preheat oven to 350 degrees.  Line two rimmed baking sheets with parchment paper, or silpat mats if you have them.  http://www.surlatable.com/product/PRO-123422/Sur-La-Table-Silpat-Baking-Mat
In a large bowl, combine flour, salt, and baking soda with a whisk.  Set aside.
Cream butter on medium high with your hand mixer for one minute.  Add sugars and peanut butter and beat until smooth, about 2-3 minutes.  Beat in egg, vanilla and milk on low until well combined.  Add the flour mixture a little at a time and beat until well combined.  Gently fold in peanut butter M&M's with a spatula.
Drop cookies by rounded tablespoons onto prepared baking sheets and bake cookies for 10-12 minutes.  As with any cookie, they should look a bit underdone when you pull them from the oven.  They will set as they cool.  Makes about 32 cookies.
