I'm Irish by marriage, but I've always enjoyed St. Patrick's Day! Wearing green, pinching those who forget, March Madness, reuben sandwiches and cold beer make me happy. Here's a few more things I've found this month food-wise that I think should be shared...

Pistachio Pudding Layer Dessert
My mother-in-law makes this exact dessert with chocolate pudding and calls it "The next best thing to Robert Redford." I don't know about that... I wonder if Channing Tatum is Irish? :) Regardless, the chocolate dessert is delicious and I'm excited to try it with the pistachio and coconut flavors called for in this recipe.
Rainbow Fruit Salad
No link for this one, I just found the picture on Pinterest. This is a great snack for kids (or adults), although I think I'd put a pile of whipped cream on the plate instead of the marshmallows... for dipping the fruit!
Hershey's Pot of Gold Gift
I love treats with free printables!
