This may sound odd to some, and admittedly before I made it myself I wasn't sure how the flavors would be. But WOW! It's healthy, and it tastes like a decadent dessert. Score! The carrot pear sauce tops plain, as in no sugar, 0% fat Greek Yogurt. Dry toasted sliced almonds from Trader Joe's finish it. I found this recipe at www.familyfreshcooking.com The only change I made to the original recipe was to double it and cook it in a crockpot instead of on the stove top.
Chai Carrot Pear Sauce Parfaits
12 ripe pears, peeled, cored and roughly chopped
2 cups carrots, peeled and chopped
Juice of one half lemon
1 t. each of cardamom, black pepper, cinnamon and ginger
pinch of sea salt
Place all ingredients in crockpot and cook on low for 8 hours. Stir to break up any larger pieces of carrot or pear. Refrigerate until ready to serve.
Top 4-6 oz. plain greek yogurt with an equal amount of sauce and garnish with about 1 tablespoon of sliced almonds.
